If you are looking for a lower-carb or gluten-free option, make some protein-rich muffins using flour alternatives such as coconut, almond, or rice flour instead of traditional flour. Package the muffins individually and freeze them so you can pull them out one at a time and pop them into the microwave in a breeze.
