Spicy Texas Bruschetta

Recipe from July 2021


  • 1 French baguette, cut into long slices

  • Olive oil for brushing on bread

  • 1 small can jalapeños (not all will be used)

  • 2 to 3 tomatoes, seeded and chopped

  • 1 avocado, cut into cubes

  • 1 tablespoon minced parsley

  • Salt and pepper to taste

  • 2 ounces queso fresco or feta cheese, crumbled

  • Louisiana Style hot sauce for garnish


  1. Brush each side of the baguette liberally with olive oil. Place on a heated griddle to toast.

  2. Flip the bread, toasting each side.

  3. Once it is toasted, brush one side of bread with a small amount of the juice from the can of jalapeños.

  4. In a separate bowl, combine the tomatoes, avocado, and parsley, tossing to combine well.

  5. Season with salt and pepper.

  6. Top the bread with the mixture. Garnish with a thin slice of jalapeño, queso fresco, and a few drops of hot sauce.
