1 French baguette, cut into long slices
Olive oil for brushing on bread
1 small can jalapeños (not all will be used)
2 to 3 tomatoes, seeded and chopped
1 avocado, cut into cubes
1 tablespoon minced parsley
Salt and pepper to taste
2 ounces queso fresco or feta cheese, crumbled
Louisiana Style hot sauce for garnish
Brush each side of the baguette liberally with olive oil. Place on a heated griddle to toast.
Flip the bread, toasting each side.
Once it is toasted, brush one side of bread with a small amount of the juice from the can of jalapeños.
In a separate bowl, combine the tomatoes, avocado, and parsley, tossing to combine well.
Season with salt and pepper.
Top the bread with the mixture. Garnish with a thin slice of jalapeño, queso fresco, and a few drops of hot sauce.
